I noted that some tamborines are tuned to a different pitch. What does this mean as to selecting one ?

Tambourines are instruments of indefinite pitch, meaning that they are not “tuned” per se. What you are hearing is head tension differences. Especially with natural skins, the tensions will vary slightly. That will not impact the sound of the instrument when heard from more than a few feet away.
